We have been raising our heirloom blue flour corn for many years as an ingredient for our porridge blends. We had a great crop this year and for the first time we are able to offer our blue corn for sale as a flour. This is a very unusual flour and deserves some additional explanation.
The vast majority of all corn grown in the United States is a type of corn called dent corn. Other types, such as popcorn and sweet corn are grown in lesser amounts. The blue corn we grow is a flour type corn. Flour corn used to be much more common in America but with the advent of modern corn breeding, flour corns were left behind. Flour corns do not yield as well as modern hybrid corns and they are not easily harvested with modern farm equipment. The heritage varieties we grow must be harvested by hand.
The great attraction of flour corn is its flavor and texture. Flour corns contain a soft starch and when ground they have a finer contistency than other types of corns. They do not have the gritty texture of corn meals and are wonderful in baked goods. As with all our products, this corn is GMO free.
